When I started 25 years ago, Chinese cooking, I loved the food and thought it was healthy – but it fits really? I was surprised what I learned …
I have restaurant advice in the preparation and learned to cook food according to some traditional techniques, but much of it is cooked with meat and vegetables are also loaded with unhealthy fat and sodium. It was many years later, when I had a cameo Mongolia meat recipe in a newspaper of San Francisco, where nutritional information was published he was surprised by the fat and sodium in the recipe. The cause? I was using the techniques he had learned to cook a large (but often unhealthy) food in China.
I also remember an article I read years ago where the Chinese “take away” (as they call to “remove” in the UK) was analyzed from a standpoint of health and found a particular food containing a glass wine full of lard in a meal for one person (entry and main course)! The original recipe for cooking in a local newspaper that was a family favorite, it was actually fried beef in two cups of oil to 375 degrees and then drained. It was followed by a sauce that had too much salt. Since then, the recipe – and all under my healthy Chinese recipes – have been transformed and refurbished with an eye on health techniques and healthier ingredients to maintain the great taste the same but with much healthier results.

Some people will write Chinese food off as fatty and full of MSG (Mono Sodium Glutamate). Saturated fats and excess salts are considered bad for the heart and so it follows that Chinese food is unhealthy, right?
Wrong Some Chinese dishes, corrupted to become popular to western palates, fit this bill. Authentic Chinese food is not fatty, and MSG, if used at all, is used sparingly. In fact Chinese food has a long history of being directed towards promoting health; a much longer one than any local ‘fad’ in the west.
